Fukui Shuzo continues to be devoted to hand-crafting sake since its founding.  The company slogan: "Tradition is a new spirit to overcome old powers."  The brewery strives to brew sake that you will long for daily; sake that will make you smile. That is embody the essence of the, "Wako Brewery" - good water, rice, koji, rigid temperature controls, all aligned harmoniously in the effort to make good sake. Sake conveys the feelings of the brewmaster: equally the emotions of affection and sorrow.

福井酒造では、創業以来一貫して手作業を基本とした丁寧な酒造りを続けています。一方で、「伝統とは古き力を克服する新しい魂なり」という標語のもと、最新の技術を利用した「頭を使った酒造り」も合わせて追求してきました。

飲んだら笑顔になるお酒、幸せ感じるお酒、毎日飲みたくなるお酒を醸す事。すなわち「和醸良酒」。良い水と良い米、良い麹と良い酒母、適切な温度と厳格な管理、それに何よりも良い腕が大事。一つとして欠くことが出来ません。これこそ「和」ではないでしょうか。またお酒は生き物であり、「育酒」という醸造の全過程は、まるで子育てのようなものです。お酒には作り手の想いや愛情や喜怒悲楽などの遺伝子が入っています。これからも日本人の心を魅了するだけでなく、世界の人々の心を魅了するお酒を造って行きたいと思います。
