Okuizumo: Junmai Ginjyo
Background
Okuizumo Shuzo is our portfolio’s youngest brewery at just 15 years old. Established in 2004 in the Izumo Province (known in Japanese mythology as the Land of the Gods), as a cooperative between various local and agricultural entities to harness the synergies that bountiful local rice cultivation and distinctive water provides.
Special Characteristics
Okuizumo Junmai Ginjyo is produced from Shimane Prefecture Gohyakumangoku sake brewing rice milled to 60%.

Tasting Notes
The palest straw in the glass, the nose has a floral bouquet of honeysuckle, lychee, and melon. A velvety soft texture washes over the palate with soothing orchard fruit flavors and a clean minerality that sings through the finish. An excellent sake.
